Pina Colada Cake Balls Recipe

Here it is. What you’ve been waiting for. Back in November 2011 I had a giveaway for Wendy Paul’s “101 Gourmet Cake Bites”during the giveaway I posted about making this Pina Colada recipe…it still continues to get a lot of hits on google searches. So I’m really excited to actually share the recipe with you.

But here it is today, I’m so excited to share it with you!

Pina Colada Cake Balls
Recipe by Wendy Paul, found in 101 Gourmet Cake Bites

Cake:
Ingredients
  • 1 box white cake mix
  • 3 eggs
  • 1/2 cup lite coconut milk
  • 1/2 cup pineapple juice
  • 1 tsp. coconut extract
  • 2 tablespoons flour
Instructions
  1. Mix all ingredients together, batter will be thick
  2. Pour into a greased 9×13 baking pan
  3. Bake at 350 degrees for 28-32 minutes or until cake springs back when lightly touched
  4. Remove from oven and cool completely
  5. Crumb cake into small even pieces, placing crumbs in a large bowl
Add
  • 1 cup Coconut Buttercream Frosting
  • 2 Tbsp. dried pineapple chunks, finely diced
  • shredded coconut
Continued Instructions
  1. Mix together cake crumbles with other ingredients until a thick dough consistency forms
  2. Shape into evenly sized cake bites and cool 1-2 hours in the fridge, or 20 minutes in the freezer
  3. Dip into melting chocolate and sprinkle with shredded coconut (optional)
  4. While eating, dream of your own tropical paradise

Coconut Buttercream Frosting:
Ingredients
  • 8 Tbsp. (1 stick) butter, room temperature
  • 3-3/4 cups powdered sugar, sifted
  • 3-4 Tbsp. coconut milk or cream
  • 2 tsp. coconut extract
Instructions
  1. Place butter in a large mixing bowl. Beat until light and fluffy, about 30 seconds. Stop the mixer before adding the sugar or you will have a large mess to clean up.
  2. Add sugar. 3 tablespoons coconut milk (or cream), add coconut extract. Beat frosting starting on slow and increasing your speed until frosting is nice and creamy. Add 1 or more tablespoons of milk 9or cream) f frosting is too thick.
