Better Than … Eggnog Poke Cake

I haven’t baked for a really long time and I was itching to make something! I was looking at Something Swanky, which is the best website ever, and I have been dying to make her Better Than … Christmas Poke Cake. Unfortunately I didn’t have all the ingredients so I decided to adjust it a bit and make my own eggnog version…since I bought it for the first time this season, today!

Mine kind of blew up, unfortunately. It tasted great, but looked awful. It could be because I wasn’t thinking and made it with a bundt pan…what? who does that? Ya, don’t make a poke cake in a bundt pan, just saying!

My Chocolate Chocolate Chip Bundt Cake
Better Than … Eggnog Poke Cake
Ingredients
1 chocolate cake mix, prepared and baked according to directions on the box (I like to add chocolate pudding, 1 cup sour cream, and 1 cup chocolate chips to every chocolate cake I make).
1 cup eggnog
14.5oz sweetened condensed milk
1 cup chocolate sauce
1/4 cup eggnog
8 oz cool whip
Instructions
Once the cake has cooled, poke 20+ holes in the cake with the bottom of a wooden spoon
Whisk together the sweetened condensed milk and 1 cup of eggnog
Pour over the cake, filling the holes
Whisk together the chocolate sauce and 1/4 cup eggnog
Pour the chocolate mixture over the cake
Spread the cool whip over the fudge

Refrigerate for 4-6 hours

I didn’t have 4-6 hours so I put the cake in the freezer for about 20 minutes and it turned out just fine.

    I’ve never had baked goods with eggnog! That sounds really good. But I want to see a pic of YOURS! 😀

      Trust me…you don’t want to see a picture of mine…it’s not nearly as pretty 🙂
