Cheesy Vegetable Chowder

it’s about time you post a recipe!
Thank goodness for Pinterest! Without it I wouldn’t have come across this recipe. It’s in the my top 5 favorite soup recipes. That’s big time! One of my favorite soup recipes has been in my top 5 since I was 7, so you know this is good!
But don’t take my word for it…try it yourself…
This is not your grandma’s broccoli cheese soup!
Even though that’s oh so good…this stuff might, just might, be better!
When you try this recipe you may alter all your other soup recipes, because it turns out cream and half and half aren’t necessary! You wont miss it either.
The. Mr. loved this soup. The day after I made it he asked what was for dinner-I hadn’t even thought about it yet-and he said good, I’m having that soup. I looked forward to the leftovers too!

CHEESY Vegetable Chowder
Ingredients 
2 Tablespoons butter
1/2 cup chopped onion
1 cup finely chopped carrot
2 stalks celery, finely chopped (feel free to add more)
1 Tablespoon minced garlic
4 cups chicken broth
2 large baking potatoes, chopped
1 Tablespoon flour
1/2 cup water
2/3 cup milk
2 cups chopped broccoli
2 heaping cups shredded cheddar cheese
Directions
Melt the butter in a large soup pot.  Add onions, carrots, and celery and saute over medium heat until tender.  Add garlic and cook 1 or 2 additional minutes.  Add chicken broth and potatoes, bring to a boil, and cook until potatoes are tender.  Mix flour with water, add, and simmer until soup is slightly thickened.  Add milk and broccoli and cook until broccoli is just tender and soup is heated through (which wont take long at all! I used frozen broccoli and it was ready almost immediately).  Stir in cheese, allow to melt, and serve.
Sorry I don’t have an exact time for cooking the veggies, I was a little preoccupied and forgot to keep track of how long it took!

    Mmmmm! I’m bookmarking this one. Since I’m vegetarian I’ll swap out veggie broth for the chicken broth. Thanks for sharing this.
