I had so much fun making these Chocolate Pudding Cupcakes. They are beyond moist and flavorful. The chocolate pudding infused in the rich cake and paired with the subtle flavor of whipped cream is an amazing combination.

Chocolate Pudding Coke Cupcakes
Ingredients
- 1 box Devils Food cake mix
- 1 can Diet Coke {or any flavor Coke you'd like}
- 1 pkg chocolate pudding mix
- 1-3/4 cup skim milk
- 1 can cool whip
Instructions
- Preheat oven to 350 degrees
- Combine chocolate cake mix and diet coke, whisking until cake mix is dissolved and well mixed. Divide evenly between a lined cupcake pan
- Bake at 350 degrees for 15-18 minutes. Check the cupcakes for doneness by tapping lightly on the top. If it springs back they are done
- Allow your cupcakes to cool completely. Use the end of wooden spoon to poke 3-4 holes in the top of the cupcakes
- Combine chocoalte pudding mix and skim milk. Whisk until mix has dissolved. Immediately put prepared pudding mix in a measuring cup and pour the mix over each cupcake, dividing as evenly as possible. Pudding mix will absorb into the cupcakes
- Refrigerate for at least 10 minutes until the pudding is set
- Top cupcakes with whipped cream and drizzle with cocoa powder, sprinkles, or even hot fudge sauce.
- Keep leftovers in refrigerator or in the freezer
