Copycat Chili’s Enchilada Soup with Velveeta Cheese

This soup is so good, and so easy. My husband hasn’t stopped talking about it since we had it. He said to put it on our “Recipes We Like” List…I didn’t know we had one. But we do now!

Copycat Chili’s Enchilada Soup with Velveeta Cheese Recipe

Ingredients


  • 2T vegetable oil
  • 2 medium onions, diced
  • 4 cloves garlic, minced
  • 1 quart chicken stock
  • 1T chicken soup base
  • 2 t ground cumin
  • 2 t chili powder
  • 1/2 t black pepper
  • 1/4 to 1/2 t cayenne pepper, to taste
  • 1 (8oz.) can tomato soup
  • 1 (19oz.) can enchilada sauce
  • 1 cup crunchy tortilla strips
  • 16 oz. Vlveeta cheese, cubed
  • 1 cup co-jack cheese, shredded
  • 3-4 chicken breast
  • 1 can whole kernel corn, drained
  • Garnishes: tomatoes, sour cream, shredded cheese, crunchy tortilla strips
Instructions
  1. Place all ingredients in crockpot, except for corn
  2. Cook 4-6 hours on low
  3. Remove chicken and whisk the remaining ingredients together until smooth, or you can blend together with a stick blender…or blender
  4. Shred chicken and add it and the corn back into the soup mixture
  5. Cook for another 20-30 minutes on low, to allow the corn to warm up
    1. If you don’t want to wait you can heat the corn up before putting it in the soup

    Do the tortilla strips get added to crockpot also and also as a garnish?

      Hi Jackie! The tortilla strips are added to the crockpot. You can of course use some as a garnish as well! Enjoy!!!

    Does your Chili’s restaurant have corn in the soup? Ours doesn’t. Or is this just a personal add in? I’m asking because I am wondering if in different areas of the country do the soups differ or do they all have same recipe? Your soup looks wonderful and is in my list of things to try.

      Hey Sherri! Thanks for your comment. To be honest it’s been so long since I’ve ordered their soup, because I love my recipe, that I’m not even totally sure. Also, I’ve lived in Utah, Connecticut and Illinois… perhaps I should have tried it all those places to see if it was the same. There’s a chance I added the corn myself, because I just love corn!

    So, I have a mild obsession with soups right now. Recently, I made a chicken tortilla crockpot soup and it was so good… but this… THIS sounds amazing! I’m going to add it to my Pinterest board for next week! Thanks for the recipe. 🙂
