Green Bean Salad with Berry Vinaigrette

Green Bean Salad Recipe:
Ingredients

  • 1 Lb wax beans
  • 1 Lb green beans
  • 3 ears of grilled corn
  • 1lb strawberries
  • 1/2 lb blueberries
  • 1/2 lb blackberries
  • 1 cup fresh basil
  • 1 lb tomatoes
  • 1 medium red onion
  • 1/4 cup crispy noodles
  • 1/4 cup sliced almonds
Instructions
  1. Clean and cut beans. Blanche in boiling water for 3 minutes and immediately drop into an ice bath.
  2. In a medium bowl combine beans, grilled corn and berries. Mix well.
  3. Add onion, fresh basil, crispy noodles and sliced almonds to bean mixture. Chill and serve with berry vinaigrette
Berry Vinaigrette Recipe:
Ingredients
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup strawberries
  • 3 tsp fresh tarragon
  • 1 tsp fresh garlic
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • salt to taste
Instructions
  1. Combine berries, garlic and tarragon in a blender, blend until smooth
  2. Add vinegar, oil and salt to taste.
  3. Chill for 2 hours.
