Guest Blogger: Something Swanky

Hi all you MBR readers!! I’m super excited to be here. Especially since Miss Hil and I are actually real life friends! I love it when I’m real life friends with my blogger friends too 🙂

My name is Ashton and I blog over at Something Swanky. I pretty much live, breathe, and blog desserts. I host a weekly dessert link party, post lost of recipes, and create themed dessert recipe collections! I’d love for you to swing by when you get the chance.

But, for today, I’m bringing a little “Something Swanky” to YOU right here on My Blog Review 🙂

Last month I auctioned off a Cupcake of the Month Club package for my husband’s school. Each month, I’ll bake and a deliver a dozen cupcakes of the winner’s choice right to her door! Fun, right?


This month she wanted German Chocolate Cupcakes. I’d never made a from-scratch German Chocolate Coconut Pecan Frosting before, and I was super impressed with how easy the recipe is and how great it tastes!

Caramel Coconut Pecan Frosting for German Chocolate Cupcakes
Recipe Slightly Adapted from: Recipe.com


Ingredients:

  • 1 (5 oz.) can evaporated milk
  • 3/4 c. brown sugar
  • 1/3 c. butter
  • 2 egg yolks
  • 1 1/2 c. sweetened flaked coconut (you can add more if you’d like)
  • 3/4 c. chopped pecans

Directions:

  1. Over medium heat, whisk together the milk, sugar, butter, and egg yolks in a medium saucepan. Whisk constantly until smooth, thick, and golden brown.
  2. Remove from heat and add the coconut and pecans. Mix in with a rubber spatula.
