Leftovers…Shepherd’s Pie

I hope everyone had a wonderful Thanksgiving holiday! Last night for dinner I made some Shepherd’s Pie with our Thanksgiving dinner leftovers. Thanksgiving dinner with my husbands (large) extended family I was able to eat turkey and carrots…but at my house! Now that was a feast! My mom really catered to my non-dairy diet and it was all SO good!!! There wasn’t a thing I couldn’t eat, except the Pumpkin Pie…but I got some amazing Apple Pie! It’s funny how your taste changes when you’re limited in what you can eat. I didn’t love apple pie before, but I’m pretty sure it’s the best thing I’ve ever eaten now!
My mom goes all out and makes every get together seem like it’s the most special occasion in the world! I hope to be just like her 🙂

What you need:

Leftover Turkey
1 bag frozen peas (or whatever veggies you have)
Leftover stuffing
Gravy
Leftover Sweet Potatoes or Mashed Potatoes

Easy right? You already have all the ingredients! And if you don’t, well this recipe is definitely flexible.

*Cut up your turkey
*Place turkey, stuffing and peas in a (oven save) dish
*Top with sweet potatoes/mashed potatoes.
*Level with a spatula
*Bake in the oven at 350 degrees for about 10 minutes (time varies)

    Your mom is amazing. I”m glad you got to have some tasty food! I agree, Apple pie is heaven sent.
