Lemon Meltaways

If you like lemon…true lemon…these cookies were made for you!
If you like your lemon cookies to be a little sweeter half the lemon juice and add more powdered sugar to your batter. You could also top these meltaways with a cream cheese frosting.

Lemon Meltaways

Ingredients
  • 12 Tbsp (1-1/2 sticks) unsalted butter, room temperature
  • 1/3 cup powdered sugar
  • Zest of one lemon
  • 2 Tbsp lemon juice
  • 1 Tbsp vanilla extract
  • 1-3/4 cups + 2 Tbsp flour
  • 2 Tbsp corn starch
  • 1/4 tsp salt
  • 2/3 cup powdered sugar


Instructions
  1. Cream the butter and 1/3 cup powdered sugar together
  2. Beat in the lemon zest, lemon juice and vanille
  3. Mix the flour, cornstarch and salt in a large bowl
  4. Beat the dry ingredients into the wet until just combined
  5. Roll the dough into a 1-1/4 inch log
  6. Wrap in plastic and let chill in the fridge for at least an hour {or put it in the freezer for 1/2 hour}
  7. Preheat oven 350 degrees
  8. Slice the dough into 1/4″ thick slices and place them on a baking sheet, 1″ apart
  9. Bake 12-15 minutes, or until just lightly golden brown
  10. Dredge cookies in powdered sugar to coat
