Peanut Butter Overnight Oats Recipe

My boys are obsessed with oatmeal and eat it every morning. My husband eats it every morning too. I’m kind of a night owl, which I need to fix but that’s a whole other story, so I’m not always up when my husband leaves for work. Granted some days he has to leave by 6, but still. I decided to help him with his New Year’s Resolution of eating healthier by making him this Peanut Butter Overnight Oats recipe. I figured if I wasn’t up to make him breakfast that I could make it the night before.

I love oatmeal because it’s really healthy and because I can add a lot of really healthy ingredients to it. I start by combining the Blue Diamond Almond Breeze Almondmilk with chia seeds, maple syrup and peanut butter giving it a really deliciously sweet flavor, and a little crunch. You’ve got to try it. It’s delicious!

Peanut Butter Overnight Oats Recipe

Ingredients

  • 1/2 cup rolled oats {quick oats if you want to eat sooner}
  • 1/2 cup Blue Diamond Almond Breeze Almondmilk
  • 1 Tbsp chia seeds
  • 2 Tbsp peanut butter
  • 1 Tbsp maple syrup
  • Chopped almonds {optional}
  • Garnishes

Instructions

  1. Combine Almondmilk, chia seeds, maple syrup and peanut butter well, then add the rolled oats
  2. Cover and let sit overnight in the fridge {or 30 minute if using quick oats}
  3. For breakfast top with sliced banana, strawberries, chopped almonds, etc. Use your imagination

    You had me at peanut butter 🙂 This overnight oats recipe might just be a winner with my boys…I have not had any luck with other recipes. They love hot oatmeal, not so much when it is cold, but oatmeal and peanut butter might be the key.

      I’m the same Krystal…after making everyone else’s breakfast it seems there’s hardly enough time to make my own. These made it possible for me to actually sit down with my boys and eat, haha!

      It was perfect. My boys ask for food all day long so it was nice to have them not ask for a while since they were so full!!! 🙂
