Red Velvet Whoopie Pies 

Pies:
Ingredients

  • Red Velvet cake mix
  • 2 eggs
  • 1/2 cup oil
  • 1/2 cup chocolate chips
Instructions
  1. Preheat oven 300 degrees F
  2. Mix eggs and vegetable oil until well combined. Stir in cake mix and chocolate chips
  3. Line 2 cookie sheets with parchment paper. Scoop heaping tablespoons of batter onto prepared cookie sheets
  4. Cook for 18-20 minutes {or until cookie springs back when tapped}
    1. You can also cook at 350 for 8-10 minutes
Filling:
Recipe adapted from Food Network
Ingredients
  • 8 ounces cream cheese, at room temperature
  • 3 Tbsp unsalted butter, at room temperature
  • 2-1/2 cups confectioner’s sugar
Instructions
  1. Beat the cream cheese and butter together until smooth
  2. Slowly beat in the confectioners’ sugar
  3. Sandwich spoonfuls of filling between 2 cookies
  4. Refrigerate for 30 minutes before serving
    1. After enjoying, place remaining cookies in the fridge

These would be perfect to cut out in hearts using a cookie cutter!

I had never had a Whoopie Pie before but I love them

I’ll have to make my second favorite cake next time…Devil’s Food

    Are the chocolate chips to be melted before adding to the batter?

      No need to melt the chocolate before adding to the batter Melanie. Unless of course you want to! I have not done that however. Hope you enjoy them as much as we do!!!
