Eggnog Cake Balls Recipe

It’s that time of year again! Time to start baking those holiday recipes that are overflowing on your Pinterest Holiday board. Who’s excited? …I am!!!
One of my favorite things to do is bake something special and give it to friends and family. Especially at Christmas! In our house we don’t start decorating for Christmas until after Thanksgiving, much less bake Christmas holiday treats, so naturally the day after Thanksgiving I went directly to Price Chopper and picked up a few items I need to make some amazing Egg Nog Cake Balls.
I have always loved Eggnog. I usually mix it with milk now, but when I was a little girl diluting it was out of the question. I remember going to a Christmas party one of my dad’s clients was throwing, when I was about 5 years old. As my family and I were getting in the elevator my dad said “Hil, whatever you do, don’t drink the Eggnog.” I was so confused. My first thought was There’s eggnog? Then quickly that thought turned to, Why can’t I have any Eggnog? It was a beautiful party but I just didn’t understand the no eggnog rule.
Nothing screams Christmas quite like Eggnog, so what better dessert to start this holiday season off with? But if we’re being honest it really was hard to decide. I’m a sucker for the Betty Crocker section. The possibilities are endless with all those cake mixes.

Eggnog Cake Balls Recipe

Cake Balls
Ingredients
  • Betty Crocker Yellow Cake Mix
  • 3 eggs
  • 1 cup half-and-half
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. rum extract

Instructions

  1. Mix together cake mix, eggs, half-and-half, cinnamon, nutmeg and rum extract
  2. Pour into greased 9×13 baking pan
  3. Bake at 350 degrees for 28-32 minutes or until cake springs back when lightly touched
  4. Remove from oven and cool completely
  5. Crumble cake into small, even pieces and place in a large bowl

Frosting
Ingredients

  • 2-1/2 Tbsp butter; room temperature
  • 1-1/4 cups powdered sugar
  • 2 Tbsp Milk
  • 1/2 tsp. vanilla extract
  • 1 tsp. rum extract

Instructions

  1. Mix butter in a mixer until light and fluffy
  2. Stop the mixer, then add powdered sugar
  3. Add milk, vanilla and rum extract
  4. Mix frosting until nice and creamy

Assembling Cake Balls
Ingredients

  • White Chocolate Melting Bark

Instructions

  1. Mix together cake crumbles and frosting until a thick dough consistency forms
  2. Shape until evenly sized cake balls and cool 1-2 hours in the fridge; or 20 minutes in the freezer
  3. Dip into white melting chocolate and sprinkle with nutmeg (while still wet) if desired
Don’t be scared to add a little nutmeg on top. I was nervous it would be too strong, but I really liked it. Helped make the cake balls smell extra amazing!
