Apple Chicken Salad

I eat a lot of chicken salad…so I decided to spruce it up a bit for a change! Because when it comes to food change is good when you eat something on the regular!


This time around I used canned chicken from Costco! So Simple! Love 🙂
1    can of chicken
1/2 onion, diced (I prefer white)
2    apples, diced (I used Gala)
1/4 cup raisins (could use craisins…or grapes!)
DRESSING
1/4 cup light mayonnaise
1 T       Dijon mustard
1 T       red wine vinegar
*I use a similar vinaigrette for salad…add 1 T Olive oil, don’t use mayo…wonderful!
As Easy as 1, 2, 3…and 4
1. Wash and dice the apples and onion
2. +Add chicken and raisins
3. In a separate bowl combine mayo, Dijon, and vinegar.
4. Combine two bowls!
The wonderful thing about this recipe is you can pretty much eyeball everything…you can use any of the above ingredients, or omit 1/2 of them and you’ll still leave with an awesome chicken salad…you can use more apples and raisins, or use less! Whatever your little heart desires 🙂 …if you have left over celery you just don’t know what to do with, add it!
