Balsamic Chicken..and my thoughts

I love documenting all of these great recipes! The Mr. has never been happier in his life with all these great dinners I’m making him. I have never been consistent with making dinner, usually it was something quick and random, and if that didn’t work out it was eggs, turkey bacon and toast. I’ve always wanted to have dinner together at night, that’s how it was with my family growing up, and I think it’s very important. I read blog after blog on how to get organized, ingredients that had to be in your cupboard, and how to save money at the grocery store, etc, etc. All it did was overwhelm me and I reverted back to square one!

So what changed?
I’ll tell you…I refused to get on Pinterest, I thought it was the biggest waste of time! Why would I need to ‘pin’ things that I liked? Then the thought came to me…I’ll pin recipes I want to try! It seemed like such a better alternative to a pile of magazines and random emails here and there. Well guess what….IT IS! Pinterest really has organized my life as far as cooking is concerned. I have a board dedicated to recipes I want to try, and when I try them I transfer them to my ‘Food’ board or my ‘My Blog Review’ board. It’s worked out wonderfully for me! So if you’re a hater, become a believer!!!

Once you start making recipes consistently it will surprise you how easy it is to get organized, it comes naturally without much effort! You’ll find that a lot of recipes are almost identical with small differences here and there. As time goes on you’ll find what items you need to have on hand because you will know what you like and what you don’t like. Just try it, you’ll see. Plus, lots of things you only have to buy once and it will last a long time, and go in lots of different recipes. Like balsamic vinegar for example. Or red wine vinegar.
The biggest motivator is desire, if you don’t desire it it most likely wont happen. I didn’t enjoy cooking because it overwhelmed me, but since it became a hobby I can’t seem to get enough! That’s why I enjoy keeping it all documented on this blog. If I didn’t like cooking this blog wouldn’t have made it past the first week! (When did I become a motivational speaker? …)
On to the good stuff
  • 4-6 cut up boneless skinless chicken breasts (mine were huge, so I used 3)
  • 2 14.5 oz can diced tomatoes (with juice of course)
  • 1 small onion thinly sliced
  • 4 garlic cloves
  • 1/2 cup balsamic vinegar
  • 1 tbsp. olive oil
  • 1 tsp each: dried oregano,basil, and rosemary

Place ingredients in the crockpot in this order:

  • Pour the olive oil in crockpot
  • Add chicken
  • Add sliced onion
  • Add dried herbs and garlic cloves
  • Pour in vinegar
  • Top with tomatoes
  • Cook on high 4 hours, serve over pasta, or rice. I prefer angel hair pasta.

The balsamic and tomatoes were an awesome combination, they complimented each other very well! Sometimes when using vinegar it can make a dish overly pungent but that was not the case here. I also like that the onions were thinly sliced instead of minced, it’s good to mix it up a bit 🙂 I almost never used herbs before and now I love them! I have spices that haven’t been touched in over 4 years…I plan on changing that!


5 Stars! I loved it and The Mr. loved it too! He liked the balsamic vinegar taste, and that it wasn’t too sweet. I don’t love tomatoes, especially by themselves, but I could have this dish any day of the week!

    Do you think you can use stewed tomatoes? This looks delicious!

      Oh it is delicious. It is still one of our family favorites! I don’t know why you couldn’t use stewed tomatoes, sounds great. Let me know how it turns out.

    Loved this recipe! The balsamic vinegar gave the tomatoes a sweet yummy taste! served it over wild rice. So amazing! My husband loved it too!
