Caramel Marshmallow Popcorn

I am loving these popcorn recipes using one package of microwave popcorn. It’s perfect for those days I only want to make enough for two or three people, not 20!

I may or may not have eaten 95% of this… Is that bad?
Caramel Marshmallow Popcorn
Recipe adapted from Chef-in-training

Ingredients

  • 1 package microwave popcorn
  • 1 tsp butter (you can use more if you don’t use butter flavored popcorn)
  • 1 cup brown sugar
  • 2 Tbsp. light corn syrup
  • 1/2 tsp. vanilla
  • 3 cups marshmallows

Instructions

  1. Pop popcorn according to package directions. Remove unpopped kernels
  2. Melt butter in a medium saucepan over medium low heat
  3. Add brown sugar, corn syrup, vanilla and marshmallows
  4. Stir until marshmallows are melted and the caramel mixture is smooth, turn up heat if necessary
  5. Pour over popcorn and stir until popcorn is evenly coated
  6. Store in an airtight container
So there ya have it, a caramel popcorn recipe for one…if you’re like me!

    Putting crushed Oreos on the popcorn right after the marsh mellow is really good as well!

    I pinned this recipe a long time ago and have been wanting to try it. I think I will finally make it for our Fourth of July Barbeque. I plan to make a red batch and a blue batch then mix the two together.

    This look awesome but I don’t use microwave popcorn (we do it the old fashioned way here). Any idea how many cups of popcorn a bag would be?

      I’m not exactly sure, but I wouldn’t think you would need more than 1/4 cup unpopped popcorn.
