Chicken Enchilada Pasta

We’re gettin right to the good stuff today…

Chicken Enchilada Pasta

Recipe Modified from How Sweet It Is

Ingredients

1T   Olive Oil
1/2  Onion, chopped
1     Green pepper, chopped
2     Garlic cloves, minced
1t    Cumin
1/2t Chili powder
1/2t Paprika
Pinch Cayenne pepper
Can of chicken…or two cooked chicken breasts
Pasta—angel hair
1 10 oz. can of red enchilada sauce


That’s right, tonight was one of those nights…it needed to be something quick, I didn’t have time to thaw chicken, so canned Costco chicken it was, and that’s never second best!

Let’s Get Started
Chop your onion and green pepper

Boil the water for your pasta…cook your pasta. While that’s cooking
Heat your oil over MEDIUM heat (I wasn’t thinking and put it on high…those were some cooked veggies in about 2 seconds!)
+Add onions and peppers. Saute until they are soft, about 5 minutes

+Add garlic, let cook for another minute
+Add chicken, cumin, chili powder, paprika and cayenne pepper, and enchilada sauce

Notice the time…we ate late! Sorry honey!

Turn heat down to low
Drain pasta
+Add pasta to skillet
Mix until everything is mixed well

Enjoy!

This would be good with cheese, guacamole and, or sour cream too!

I really liked this enchilada sauce. It reminds me of the enchilada sauce at a Mexican restaurant back home that I love! Even the Mr liked it. He said, “I don’t love enchilada sauce but I liked this sauce. Didn’t love it, but I liked it.” So you know what that means right?

NEXT TIME I make enchilada sauce I’m definitely adding cumin, chili powder, paprika and cayenne pepper! No more plain Jane, boring enchilada sauce straight from the can.
