Chicken Parmigiana with Sweet Marinara

I remember {one of} the first times I had Chicken Parmigiana
I was 13 years old in Florida for the USYS National Championship
I’m pretty sure I ate it at least 3 times in the short week we were there
We were staying at one of the Disney resorts so I bet the chicken was even shaped like Mickey…oh Disneyland/world…isn’t it the greatest?
To be a kid again 😉
When I was deciding how to make my own version of chicken parmigiana I didn’t want to make just any old marinara sauce…or use one out of a jar.
I love, love, love my chili recipe and decided to make my own marinara sauce using it as my inspiration

Which, turns out, was a phenomenal idea!!!

Chicken Parmigiana
Sweet Marinara
Ingredients 
1T olive oil
1 small onion, chopped {I use frozen onion…so much easier}

1 can (14 oz) diced tomatoes with juice

1 can Campbell’s tomato soup

1T brown sugar

1T ketchup
1T BBQ sauce
Directions
Heat the olive oil in a medium saucepan on low heat
Add onion onion and cook, stirring occasionally, about 5 minutes
Add tomatoes, tomato soup, brown sugar, ketchup and BBQ sauce
Simmer, stirring occasionally, for 25 minutes
Chicken
Ingredients 
6 chicken breast
1 cup Panko bread crumbs
1/2 cup Parmesan {grated}
1/2 tsp salt
4 eggs, beaten
Cooking oil for frying
Directions

Heat oven to 350 degrees
Heat 1/2 inch of cooking oil over medium heat
In medium bowl combine bread crumbs, Parmesan and salt
Dip each chicken breast in the eggs and then in the bread crumb mixture

Place the chicken in the oil until browned, turn once and place on a baking sheet
{I like to place foil on my baking sheet, then put a cooling rack on top of that}
Bake for 20 minutes

Make pasta according to package directions
My pasta of choice is Colavigta angel hair nests
They don’t fall apart while cooking and they make a great presentation
Which I’m all about!!!
You can also try making this without the oil…skip the frying process and put the chicken directly in the oven.
