Creamy Avocado Pasta

I got the inspiration for this recipe here.

What you will need:

  • 1 large ripe Avocado, pitted
  • 1/2 lemon, juiced
  • 2-3 garlic cloves, to taste (I used 3 and it was quite garlicky, but if you are not a big fan of garlic use 1 clove)
  • salt, to taste
  • 2 tbsp extra virgin olive oil
  • Pasta (My #1 pick is angel hair…LOVE)


    How you make it:

    1. Cook your pasta. Do I need to explain how to do that?
    2. Make the sauce by placing the garlic cloves, lemon juice, and olive oil into a food processor-I used a Bullet…which makes our house smell like a bullet, I’m pretty sure it’s on the fritz! Does anyone else’s bullet do that? Process until smooth. Now add in the pitted avocado. Process until smooth and creamy.
    3. Drain cooked pasta in a strainer and place pasta into a large bowl. Pour on sauce and toss until fully combined. Salt to taste.

    Serve immediately

    NEXT TIME: Unfortunately I don’t think there will be a next time for this dish. The Mr. hated it, and I wasn’t too fond either…he ended up eating some leftovers! The only way I’ll make it again is if my husband goes out of town, and even then I’ll probably opt for the Coconut Chicken so I don’t have to share 😉

    I must have made this wrong, because according to “oh she glows” this is one of her favorite recipes. She mentions there is a hint of lemon…the lemon was overpowering! Way too much lemon! If you really want to make this recipe I’m thinking a Tbsp of lemon juice at the most.  Or to taste, definitely not the main taste…I like avocado too much!
