Fresh Strawberry Mint Lemonade

This Fresh Strawberry Mint Lemonade recipe is just in time for all your summer parties coming up. I can’t wait to try it with raspberries, mangoes, blackberries, you name it! Making a couple different fruit purees for your prepared lemonades would make for a really fun lemonade bar!

Fresh Strawberry Mint Lemonade. It's the perfect way to freshen up your lemonade for all your summer parties!

Fresh Strawberry Mint Lemonade

Ingredients

  • 3/4 pound fresh strawberries (about 12-20 strawberries), hulled and sliced
  • 2 Tablespoons granulated sugar
  • 6 sprigs fresh mint
  • Lemonade
  • Ice
  • Garnish {optional}: Lemon slices, whole strawberries, fresh mint sprigs

Instructions

  1. Preheat your oven to 375 degrees
  2. Add sprigs of mint to lemonade, place in the fridge
  3. In a shallow baking dish, toss the strawberries with 2 Tbsp of sugar. Arrange them in an even layer and roast for 25 minutes, or until the berries are soft, slightly darkened and juicy. Remove from the oven and let cool
  4. While strawberries are roasting make your simple syrup. Place 3/4 cup sugar and 3/4 cup water in a small saucepan. Bring to a boil, stirring regularly until the sugar has dissolved. Remove from the heat and let cool completely
  5. Transfer cooled strawberries to a blender a blender {include the strawberry juice} and purée until smooth. Gradually add simple syrup until you reach your desired level of sweetness. {Amount depends on level of sweetness desired, ripeness of strawberries, etc. Save remaining syrup for future use}
  6. Refrigerate for about 30 minutes to let the flavors mingle
  7. Pour lemonade into ice-filled glasses, place spoonfuls of strawberry purée into lemonade

Garnish with lemon slices, strawberries, and fresh mint for added taste and fanciness

      Do tou just place the mint as a garnish or do you place it sooner to let it get some flavor

        Hey! Great question… I place it in the lemonade while I’m making it so it really enhances the flavor.
