Fruit Pizza {Easy Recipe with Cream Cheese Frosting and Glaze}

My sister-in-law makes a killer Fruit Pizza every time we get together as a family and I had to have the recipe so I could share it with you! It’s my favorite. I love sugar cookies, fruit, and especially love glazes, so naturally this Fruit Pizza is just for me!

Fruit Pizza {Easy Recipe with Cream Cheese Frosting and Glaze}

Fruit Pizza! An easy recipe with cream cheese frosting and glaze. Use refrigerated sugar cookie dough or make your own.

Ingredients
 
  • 1 – 16.5 oz package refrigerated sugar cookie dough, prepared according to packaging instructions.
  • 1 – 8 oz cream cheese, softened
  • 1/4 cup confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • Fruit you want to top your Fruit Pizza with
    • Strawberries, bananas, blueberries, canned mandarin oranges, kiwi, peaches, pears, pineapple, etc.

For the glaze:


  • 1/4 cup sugar
  • 1 T cornstarch
  • 1/2 cup unsweetened pineapple juice
  • 1/4 cup water
  • 2 T lemon juice
Instructions
  1. Prepare sugar cookies, either as individual cookies, in a pie pan, individual tarts, or as a pizza crust.
  2. Glaze: In a small saucepan combine sugar, cornstarch, pineapple juice, water and lemon juice until smooth.
  3. Bring to a boil. Cook and stir for 2 minutes, or until thickened. Place the glaze in a small bowl and refrigerate until it is cooled, but not set.
  4. In a small bowl, beat cream cheese and confectioners’ sugar and vanilla until smooth.
  5. Spread cream cheese mixture over top of cookie(s)
  6. Arrange fruit on top then drizzle the glaze over the fruit.
  7. Refrigerate for 1 hour or until chilled.
  8. Enjoy!
