Random Thoughts…I Haven’t Always Cooked

I haven’t always made dinner religiously. Infact the first few years of marriage I can count on one hand the meals I made (over, and over, and over again!). My Chili, Chicken and Wild Rice, Italian Chicken and Taco Soup. I probably only planned a meal, on average, like once every two weeks. I look back and seriously wonder what we ate half the time…and now that I’ve thought about it, I can tell you…some sort of pasta, and chicken, and veggies-not always together.

Why was I such a bad wife?

I tried many things over those first couple years to get the ball rolling. I looked at blog after blog about couponing, how to plan meals, etc. I’m pretty sure I’ve tried couponing 3 dozen times! It was so overwhelming to me…how are you supposed to plan meals by looking through the ads?
Then there were the blogs that told you how to plan meals, weeks and months in advance. Those are great, they really are. The only problem was, I really had no desire to make any of their recipes. I don’t know why, they just didn’t interest me.

What I wish I had  known back then!
Now that I’ve been cooking more consistently I’ve found that a lot of recipes call for the same things!
It gets easier as time goes on. I don’t know why, I can’t explain it, but now thinking of what to make for dinner is something I enjoy to do, not something I avoid. I think the long list of ingredients overwhelmed me. I thought, “Wow, that’s a lot of stuff, that probably costs a lot of money!” Not really thinking that I probably already had half the ingredients.
Before I was 100% baker…I would make 5 desserts to 1 meal (almost always giving them away to friends, or The Mr. would take them to work), now it’s 5 meals to 1 dessert and I’m loving it-I’m pretty sure he is too!
Ah, oh well! Ya live, ya learn!
I’m still an amateur at best, but I have fun making new recipes. Even if I do botch a few here and there…kind of like dinner last night…our French Toast Casserole took double the time-we ate at 9pm-it just wasn’t cooking…I have no idea why! Meh, at least The Mr. is understanding!
