Lemon Chicken

I made this recipe with the understanding that half of the ingredients used my husband doesn’t like. Am I terrible or what? My mom has been telling me for a while how great it is and that I needed to try it. I wasn’t so sure because lemon chicken doesn’t really sound like my kind of thing…well it is now! At least this recipe is! So if you, or a loved one doesn’t like lemon, or mayonnaise (like my husband) don’t worry, I think ya’ll like this, you can’t even tell they are there.
So why use them you ask?
Because they are necessary!
Cream of Chicken soup just wouldn’t be enough.
So here ya go, these 5 ingredients make up the easiest recipe ever!
Lemon Chicken

1 can 10-3/4oz cream of chicken
1 soup can 10-3/4oz chicken broth
1/2 to 3/4 cup mayonnaise
1 tsp lemon juice
1-2 cans (12.5 oz) chicken (drained)

  • Combine the soup and mayonnaise until smooth
  • Add the broth and lemon juice and mix well
  • Add the chicken to the soup mixture
  • Heat over medium-high heat until warm OR Bake for 30-35 minutes at 350 degrees (if baking top with grated parmesan cheese if desired)

Serve over rice, with a side of broccoli

Oh PS, The Mr. totally loved it.

    Okay, this looks like it has possibilities.
    Do I drain the canned chicken?
    And I’m guessing the chicken is spread in a pan and the soup/broth mix is poured over?… or is it stirred together?
    And it sounds like this would be good for leftover chicken as well?

      I’m sorry! I’m not quite sure why I didn’t put that information in the directions.
      -Drain the canned chicken
      -Mix chicken in with the soup mixture
      -Leftover chicken would be great in this recipe!
