I might add these could not be easier or taste more amazing. I love almonds, and I love pesto so I wanted to try them together. I didn’t quite know what to expect but they blew me away. Don’t they look delicious!?

Pesto Roasted Almonds

Ingredients

  • 1-6oz. can Almonds, Lightly Salted
  • 1/2 cup Pesto
  • 2 Tbsp grated Parmesan cheese

Instructions

  1. In a small bowl add the almonds and pesto and mix well. Let the almonds sit in the pesto for about 10 minutes.
  2. Peheat the oven to 225 degrees. Line a baking sheet with parchment paper and set aside
  3. Stir in the Parmesan
  4. Transfer the almonds to the prepared pan, leaving any excess pesto in the bowl
    • The more pesto on the almonds the longer it will take to bake them. If you wand more, which tastes amazing, just make sure you bake them longer
  5. Spread almonds in a single layer on the baking sheet. Bake for 30 minutes {or longer}, stir every 15 minutes, until the pesto is dried and the almonds are crunchy
  6. Remove from the oven and allow the almonds to cool completely, then store in an air-tight container
    • You can place them in freezer-safe bags if you would like to make them in advance

    I eat a lot of almonds (I try for 10 a day) and sometimes they get boring – this idea is unique and I can’t wait to try it! Thanks so much for linking up to Throwback Thursday and hope to see you there next week, too!
