Pina Colada Cake Balls

I made Pina Colada cake balls from, you guessed it, 101 Gourmet Cake Bites and while the cake was baking it made up for the fact that I can’t eat any (dairy) because it smells A.M.A.Z.I.N.G. So good, seriously, I wish it were a candle because I would burn it day and night!

All I have to say is there is going to be a lucky winner next Friday! because you can make them too. Lucky, lucky!

If you can believe it, this is the first time I have ever made cake balls with white chocolate! When it comes to chocolate I’m a milk chocolate girl! But I have been in the coconut mood this week. First coconut chicken, now this! What will come next?


I have made a lot of cake bites in my day and these were actually on the more difficult side to dip because they kept falling apart! They were in my fridge overnight so I know they were chilled long enough! I don’t know what the deal was. If I had to guess I would say it’s because there were pineapple chunks in the frosting so the cake just wouldn’t stay together…I ended up freezing half of them because it was taking so long to do and I know I wont be able to finish them over the next couple days.

I’ll let you know if it makes a difference…freezer vs. fridge here we come!

These are a fun treat for summer (and a nice escape during the winter) so I will definitely be making them again. Especially if freezing them is the trick!

    I have never even eaten a cake pop, let alone made one. I know, I need to get with it. However, this cookbook may be the way to change that! Have a great weekend.
