Skinny Buffalo Chicken Lettuce Wraps
Ingredients

For the chicken:

  • 1-1/2 pounds boneless skinless chicken breast
  • 1 celery stalk
  • 1/2 onion, diced
  • 1 clove garlic
  • 32 oz fat free low sodium chicken broth
  • 1/2 cup hot sauce, separated

For the wraps:

  • Lettuce leaves
  • 1-1/2 cups shredded carrots
  • 2 large celery stalks, cut into 2-inch matchsticks

Instructions


  1. In a crockpot combine chicken, onion, celery, garlic, broth and 1/4 cup hot sauce. Cover and cook on high 4 hours. Alter cooking time if you find that your crockpot cooks faster or slower.
  2. Remove the cooked chicken from your crockpot, reserving 1/2 cup broth.
  3. Shred the chicken with two forks, or with your kitchen aid mixer
  4. Add 1/2 cup broth and 1/4 cup hot sauce {You can always use more hot sauce, but I needed mine to be more on the mild side so my toddler could eat dinner too!}
  5. Place chicken in each lettuce cup and top with shredded carrots, celery and dressing of your choose.
  6. Wrap up and enjoy!
