When you go buy the ingredients for this Crockpot Creamy Potato Soup, aka Loaded Potato Soup you might want to double everything because you’ll want it again soon. Very soon.
Sometimes we even double it and freeze it for later. It’s the best recipe for a large crowd!
Crockpot Creamy Potato Soup
Ingredients
- 30 oz bag shredded hash browns
- 2 cans (10-3/4 oz) cream of potato soup
- 3 cans (14-1/2 oz) chicken broth
- Small yellow onion, chopped
- 16 oz cream cheese (reduced fat works great)
Directions
- Put first 4 ingredients in crockpot and cook 6-8 hours on low
- One hour before serving, add cream cheese
Easy, peasy!
And may I suggest you garnish with shredded cheese and bacon bits…. pure happiness.
You can also serve it in a bread bowl if you desire (I used Rhodes white bread, each loaf cut into thirds, and follow directions on the bag).
Serves 8-10…or 4-5, depending upon how hungry you are 🙂
