4th of July Recipe Roundup

Thanks to CT Bloggers for letting me post some recipes for an All American BBQ/Picnic on your website!***

For your 4th of July cookout there are usually some foods you can always expect, all of which are almost a requirement if you ask me

Hamburgers
Hot Dogs
BBQ Chicken
Baked Beans
Watermelon
Potato Chips
 
But I don’t want to bore you with hamburger recipes (which you can find anywhere), and different toppings for hot dogs (onions, relish, sauteed mushrooms, sauerkraut, etc). I’m going to share with you some of my favorite dishes that will be a hit at your party
I promise!
Potato Salad
Potato salad is perfect for a warm day. Is it not?
It tastes perfect with any meat you decide to grill.
Just remember to keep it cold…you may not have to though…since it will be gone before you know it!

Ingredients
5 lbs potatoes, cooked, cubed
8 eggs, hard boiled
1 cup regular mayonnaise (full fat)
1 cup light mayonnaise
1/4 cup light sour cream
1/4 tsp. onion powder, or to taste
1/4 tsp. seasoned salt (Lawry’s is a great brand), or to taste
1-2 tablespoons of milk, as needed

Directions
Place cubed potatoes in large mixing bowl, set aside
Cut eggs in half, remove yolks and place yolks in a separate mixing bowl
Chop the remaining egg whites and place in bowl with cubed potatoes
Mash the yolks to a paste consistency (should be a little grainy)
Add the mayonnaise, sour cream, onion powder and seasoned salt to the yolk mixture
Blend well
Adjust seasoning if needed
Add milk if mixture is too thick
Fold gently to combine all ingredients
Chill for several hours, if possible
Serves: 10-12

Slice one of the hard-boiled eggs and use for garnish with a little paprika sprinkled on top

TIP: I don’t know about you, but I also love mustard potato salad, so if you’re feeling a little crazy add some mustard. Sweet pickle relish would be great too! I’d start with 3 tablespoons each, and add more to taste.

If you don’t love sweet relish, you could try 2 tablespoons of capers


Grilled Corn on the Cob
You’ve already got the grill on…why not add some corn?

Directions
Peel off excess husk…you only need 2-3 layers still intact
Place corn on the grill
Turn 1/4 rotations every 2-3 minutes
When the entire husk has blackened, remove from the grill
Peel away husk
It was amazing! Adds such a natural smokey flavor to it.
The heat of the grill causes the natural sugars in the corn to caramelize turning some of the kernels brown. The more browning, the sweeter the corn.
 
Tuna Pasta Salad
The great thing about this salad is it tastes great with no added spices or anything, but you can always add some if you want

 

Ingredients
1-1/4c macaroni pasta
5oz tuna
1/2c diced celery
1/2c frozen peas
3/4c mayo/salad dressing (which is basically miracle whip)
Directions
Cook and drain pasta according to package directions
Mix tuna, mayo, celery and peas.
Combine with cooked pasta
Lemonade
A very important part of a good BBQ

This year when you make your lemonade make a batch ahead of time and freeze it
In ice cube trays of course!! Add your frozen cubes of lemonade to your lemonade that way when your “ice” melts it wont water down your drink.
