Baked Coconut Salmon

I love salmon. Do you love salmon?
It’s so versatile!
Brown sugar, lemon tarragon, lime and cilantro…
COCONUT

 

 

Some of my favorite things include coconut!
Coconut Shrimp
and now Coconut Salmon

Ingredients
Salmon fillet
1 T oil and or lemon juice (optional)
1/4 cup panko Japanese bread crumbs
1/4 cup sweetened coconut

Instructions
Preheat oven to 425 degrees
Place fillet on a baking pan and brush with oil/juice
Combine panko and coconut and spread on top of the fillet
Bake 12-15 minutes


(Optional: place under broiler until crust is golden brown)
