Butterscotch S’mores Bars

I love S’mores Bars!!! They might just be my favorite dessert to make…they are the complete opposite of high maintenance, that’s for sure. And these little ooey gooey butterscotch gems do not disappoint. When my friend’s picky husband immediately said these were on his top three list of favorite desserts…it solidified the fact that I had a winner!

Did you know that butterscotch and toffee is essentially the same thing? Toffee is butterscotch that has been cooked to the hard-crack stage…ya learn something new everyday!



Butterscotch S’mores Bars

Ingredients
  • 1 box yellow cake mix
  • 1 large egg
  • 1 stick (1/2 cup) unsalted butter, softened
  • 4-1/2 full graham crackers
  • 10-12 oz. milk chocolate chips
  • 1 cup Heath Toffee Bits or butterscotch chips
  • 2 cups mini marshmallows
  • 1/2 cup sweetened condensed milk

 


Instructions
  1. Preheat oven to 350 degrees and line an 8×8 inch baking pan with tin foil and spray with cooking spray. Make sure the foil goes up over the edges, your pan will be full!!
  2. Place cake mix, egg and butter into a large mixing bowl. Mixing with hands until a nice dough forms. Press half of the dough into the bottom of the prepared pan.
  3. Layer with graham crackers, chocolate chips, toffee bits then marshmallows
  4. Top with remaining half of dough pressing evenly
  5. Drizzle sweetened condensed milk over the top
  6. Bake for 28-33 minutes, until cooked through and golden brown on top {Mine started to get a little too golden before it was finished cooking, so I placed a sheet of foil over the top of the pan so it would continue to cook, but the top wouldn’t burn. If you need to do this, make sure it is just placed on top, not secured to the pan}
  7. Remove from oven. let cool for 5 minutes then take a plastic knife and run along the edges to loosen. Let cool completely then remove bars from pan with foil edges
  8. Cut bars into squares and serve
