Candy Corn Cookie Bark

I love holidays. I love changing the decorations in my house from Christmas to Valentine’s Day, to St. Patties, to Easter, etc. It seriously makes me so happy. I love the treats that go along with those holidays too. Like in the fall nothing beats peanuts and candy corn…I could eat that, and only that, the entire month of October. But I also love treats that are interchangeable, like this one! You can make cookie bark for any holiday!
When we were back home in Utah we visited some of our old work friends. I used to send my husband with cupcakes and cakes all the time when he worked there so I decided to mix it up a bit and make them a bunch of different treats they could snack on. …ya know, to make them feel bad that we don’t live there anymore. I think it worked!
And these were a hit!

Candy Corn Cookie Bark
Adapted from Home Based Mom
Ingredients

  • 14 whole Oreos, broken up (I couldn’t find pink ones)
  • 1-1/2 C pretzels, broken into pieces
  • 1 lb. white chocolate, almond bark or melts (I use almond bark)
  • 1 C candy corn
  • Pink, white and red sprinkles

Instructions 

  1. Cover a large cookie sheet with wax paper and spread broken cookies, pretzels and about 3/4 cup of the candy corn onto the waxed paper
  2. Place white chocolate in a container and microwave for 1-1/2 minutes. Stir and then microwave for another 30 seconds until melted and smooth (read the instructions on the package incase they suggest something different)
  3. Drizle the melted chocolate over the cookie mixture evenly, spreading with a spatula if needed
  4. Sprinkle remaining candy corn and colored sprinkles over the wet chocolate
  5. Immediately place cookie tray in the refrigerator until the chocolate is firm
  6. Remove and gently break bark into small pieces

Store in an air tight container
