My cute family and I had the opportunity to go to Pomp and Circumstance, in Old Town Chicago, for brunch and I seriously must say there’s not one thing I could say bad about this amazing restaurant. The decor is out of this world, everything we ate was delicious, and I had a chance to meet the chef, Chad, and he is amazing! I was blown away by how well his vision was executed in each plate. When we asked my 4-year-old if he wanted French Toast of Pancakes he said pancakes. At first I wanted to push him toward french toast but when I read the description of the pancakes I quickly realized they weren’t just any old pancakes!

Pomp and Circumstance

So naturally we got both the Brioche French Toast and Buttermilk Pancakes with spiced apple compote, candied pecans and cream cheese custard. We also got the Parfait, Lobster Benedict and Biscuits and Gravy. I think it’s easy to say we didn’t leave hungry.

After we had a chance to try everything Chad came out and asked how we liked everything. I had to tell him how much I loved the pancakes and he told me his secret was to make the pancakes the star! Really fluffy and solid. Then to make sure the apple compote had the perfect amount of spice so you could really distinguish from the cream cheese custard. The perfect combination of sweet and spice. I would suggest these pancakes to anyone. Anyone! They’re perfection.

They have the freshest food brought in daily. You can really taste the difference. I also love the fact that they have seasonal flavors because it really gives the chef opportunity to use his creativity!
