Chicken Noodle Soup

My husband said We need a really great Chicken Noodle Soup recipe for years. Can I tell you the secret to a great Chicken Noodle Soup? It is definitely Homestyle Egg Noodles {found in the freezer section}. I also add half and half and a couple cans of cream of chicken soup to make it extra creamy! If you prefer your soup more brothy than creamy just omit the half and half, and it will still be delicious.

Chicken  Noodle Soup

  • 1 lb cooked boneless, skinless chicken
  • 8 cupcs chicken broth
  • 2 cans Cream of Chicken soup
  • 1 pkg Homestyle Egg Noodles {found in the freezer section}
  • 1-1/2 tsp. parsley, dried
  • 1 bay leaf
  • 1/4 tsp. thyme, dried
  • 3/4 tsp. black pepper
  • 1-1/3 cups chopped onion
  • 1-1/3 cups chopped celery
  • 1-1/3 cups shredded carrots
  • 1-1/3 heavy cream or half and half {optional}
  • 6 Tbsp. butter
  • 1/3 cup flour

Instructions

  1. Bring chicken broth to a boil with the bay leaf. Add the noodles and simmer for 20 minutes, stirring often
  2. Add cream of chicken soup, parsley, thyme, black pepper, onions, celery, and carrots. Simmer for 10 minutes or until done
  3. Meanwhile, melt butter in a skillet. Ad the flour ad cook for 1-2 minutes, stirring continuously
  4. Add the cream to the noodle mixture. Bring back to a simmer.
  5. Add the flour mixture, cook and stir until thickened, about 2 minutes
  6. Discard bay leaf, add chicken. Stir to incorporate, heat through and serve.

  • "I’m with you on the sunshine, and even though I really appreciate rain, I’m always happy to see the sun return. Fortunately, here in the desert, we generally don’t get rain in the winter, so there’s usually sunshine available when we need it most. I like frittatas for lunch or dinner, so I’m saving this recipe for when I want to make one.
