Last Sunday we had the in-laws over for dinner. My MIL has been wanting me to make crepes since Christmas so they came over for dinner.
Chicken Pot Pie Crepes
Ingredients
3 tbsp butter
1 medium onion, chopped (I forgot to buy an onion, so I used 3 Tbsp dried minced onion)
1 carrot, chopped
1 medium potato, chopped
3 cloves garlic
3tbsp flour
4 cups chicken broth
3 cups turkey (I used 2 cans of Costco chicken)
1 cup frozen peas

- In a large skillet over medium heat, melt butter
- Add onions, carrots, and potatoes. Cook for 8 minutes
- Add garlic. Cook for another minute, continue to stir
- Add flour, stir to coat vegetables
- Cook for 5 minutes
- Add broth one cup at a time, continually stirring, until mixture comes to a boil
- Reduce heat and simmer for 10 minutes, stir frequently
- Add chicken and peas
Assemble and Bake
- Preheat oven to 350 degrees
- Pour 2/3 cup mixture inside each crepe (I suggest using 2 crepes for each roll)
- Roll each side vertically, then horizontally…aka burrito-style.
- Arrange in a oiled baking dish and pour remaining sauce over crepes
- Bake for 15 minutes

The Mr. really loved the filling, but didn’t love the crepe. He said it almost seemed soggy. I didn’t have that problem. I got one that was doubled. I didn’t double all because I realized I wouldn’t have enough if I did that. So I’m thinking he got a single one, so I suggest if you make these to double your crepe recipe so you can use 2 crepes for each crepe roll.

I also made a creme filling for dessert crepes…I’ll “fill” (haha) you in on that next time, I’ve got to go to bed! I know, so annoying right?
