Easy Fajita Chicken Casserole in 30 Minutes or Less

I’ve gotta say I was a little nervous making this for my toddler because of the peppers. He had never had them before. At first he wouldn’t even try, but we may or may not have forced him. Once he tried them he loved them! Do not be afraid to introduce new vegetables to your children.

Easy Fajita Chicken Casserole
Ingredients

  • 3-4 boneless skinless chicken breasts
  • 1-2 tsp Taco seasoning
  • 2 Bell peppers in assorted colors, thinly sliced
  • 1-2 Tbsp olive oil
  • 1/2 cup shredded cheddar or mexican blend cheese

Instructions


  1. Trim the chicken breast, cut into thin slices and lay in a glass baking dish
  2. Sprinkle taco seasoning over the top of the chicken
  3. Lay the peppers on the chicken breast evenly
  4. Drizzle olive oil over the peppers
  5. Sprinkle cheese over the top of the dish
  6. Cover with foil and bake at 375 for 20 minutes, or until chicken is cooked through
  7. If you choose not to cut the chicken breast you will need to bake it longer
