Grilled Caesar Salad with Mezzetta Stuffed Olives Recipe

The holidays are always such a special time of year. There’s magic in the air, and priorities are right where they need to be. On family. Living away from family the best way I know how to make it feel familiar is to make recipes that remind me of home. One such recipe is Grilled Caesar Salad with Mezzetta Stuffed Olives. Pretty much any party that includes a Mezzetta Stuffed Olives Recipe reminds me of being home. My mom always made sure we had them available at every family party.

My mom makes the best caesar salad. If I’m being honest I truly think there’s something magical about any meal made by my mom. It sounds cliche, and I shouldn’t even say it because you’ll probably roll your eyes, but she does everything for us kids with 100% love. That makes all the difference in the world. I know without a doubt she loves us, and it really does translate into her cooking. I certainly hope my boys fell the same way about my cooking.

Grilled Caesar Salad with Mezzetta Stuffed Olives Recipe

Ingredients

  • Romain Lettuce Heads {not chopped up}
  • Olive Oil
  • Salt and pepper {optional}
  • 1/2 cup Sweet corn
  • 1/2 Cucumbers
  • 5-10 Mezzetta stuffed olives
  • Crispy onions or tortilla stripes
  • 1/2 cup Caesar dressing
  • 1/2 cup Zesty lime vinaigrette dressing

Instructions

  1. Wash, peel and chop cucumber
  2. Chop Mezzetta stuffed olives
  3. Combine caesar and lime vinaigrette dressings
  4. Mix corn, cucumbers and stuffed olives in the dressing
  5. Preheat a grill {If you don’t have a grill, you also can use a large pan on a stove}
  6. Wash and dry the romaine. Remove a few of the outer-most leaves and save for a salad at another time
  7. Cut each romaine heart in half lengthwise. Drizzle each side liberally with olive oil, salt and pepper
  8. Place the romaine hearts on the grill, and grill for about 3 minutes on each side, until slightly charred
  9. Top with sweet corn caesar dressing, and tortilla strips
  10. Serve immediately
