5 lbs potatoes, cooked, cubed
Instructions
Place cubed potatoes in large mixing bowl, set aside
Cut eggs in half, remove yolks and place yolks in a separate mixing bowl
Chop the remaining egg whites and place in bowl with cubed potatoes
Mash the yolks to a paste consistency (should be a little grainy)
Add the mayonnaise, sour cream, onion powder and seasoned salt to the yolk mixture
Blend well
Adjust seasoning if needed
Add milk if mixture is too thick
Fold gently to combine all ingredients
Chill for several hours, if possible
Serves: 10-12
Slice one of the hard-boiled eggs and use for garnish with a little paprika sprinkled on top. For Christmas you could even garnish with chopped red and green bell peppers

I don’t know why, but I never seem to make potato salad during the winter months. Kinda silly, really. I can’t even think of a reason why I shouldn’t make it year round. LOL
