Mini Cheesecakes with Raspberry Sauce

I love mini desserts. I wonder why? Maybe it’s because if I eat more than one I don’t feel like I’m overindulging. Oh who am I kidding, this coming from the girl who ate dessert first when she was little. I always overindulge! I think it’s because there’s always equally proportioned crust to filling, frosting to cake. That must be it!

It’s super yummy and so easy! You can use any kind of fruit, it doesn’t have to be raspberries. You will love it on cheesecake, ice cream, pancakes, waffles, eating it by the spoonful! Whatever you deem appropriate. Because I love all of the above!

Mini Cheesecakes with Raspberry Sauce
Ingredients

  • 3 tbsp sugar
  • 2 cups graham cracker crumbs
  • 1/2 cup {1 stick} unsalted butter, melted
  • 1 cup heavy cream
  • 10 oz. cream cheese, room temperature
  • 6 oz. sour cream or crème fraîche
  • 2/3 cup confectioners’ sugar

Instructions


  1. Line 10-12 muffin tins with plastic wrap
  2. In a small bowl, combine the sugar and graham cracker crumbs. Stir in melted butter
  3. Divide graham cracker mixture among the prepared muffin tins. Press mixture to form a small cup
  4. Place in freezer to chill while preparing filling
  5. In an electric mixer, using the whisk attachment, beat the heavy cream on medium-high speed until stiff peaks form
  6. Transfer whipped cream to another bowl and set aside
  7. Using the paddle attachment, beat the cream cheese, sour cream/crème fraîche, and confectioners’ sugar on medium speed until combined
  8. Gently fold whipped cream into the cream-cheese mixture until combined
  9. Spoon or, using a pastry bag, pipe the filling into crusts and freeze until firm. {about 30 minutes}
  10. Remove cheesecakes from muffin tin by gently pulling up on the plastic wrap
  11. Drizzle with raspberry sauce and garnish with a fresh raspberry
