Pesto Stuffed Pork Tenderloin

Two of my favorite things…Pork Tenderloin and Pesto! Perfect combination. You can be an overachiever and make your own pesto. Or just buy some at the grocery store. What’s your favorite pork tenderloin recipe?

Pesto Stuffed Pork Tenderloin
Ingredients

  • 2 pound boneless pork tenderloin
  • 3 Tbsp butter
  • 1 cup pesto

Instructions


  1. Preheat the oven to 400 degrees
  2. Heat 3 Tbsp of butter over medium-high heat
  3. Add the pork and cook, turning occasionally, until seared on all sides. About 4 minutes
  4. Place the pork loin on a cutting board and make a slit along the side from top to bottom, cutting just deep enough so the loin opens up and lies flat like a book, aka butterflied
  5. Over the cut surface cover with 1/2 cup of pesto
  6. Fold over and tie firmly at 1″ intervals with kitchen string {if you don’t have any don’t worry, I’ve done it without string before and it’s just fine}
  7. Place the tied tenderloin on your baking dish
  8. Cook until the internal temperature reads 145 degrees
    • Each oven is so different, so I’d check after 20 minutes, place more pesto on top of the tenderloin, then check again after 10
