I love Skinny Crock Pot website. I have found a lot of really great recipes…lots of them dairy free which is very convenient since I’m on a dairy-free diet right now!

WHAT I DID DIFFERENTLY:
*I used 1 1/2 lb Roast.
*Cooked it for 5 hours on low
*Added Celery
MY THOUGHTS:
…The roast wasn’t very tender. It was a lean roast so I think that’s why. I will check it after 4 hours of cooking next time, that would be plenty I think.
…The carrots and celery were not cooked enough so I took the potatoes and roast out and cooked them an extra 30 minutes on high, and they still weren’t done! (What gives?) I cooked them again for 30 minutes on high.
Overall the flavor was great, but the underdone veggies and overcooked meat was a problem this go around!
2 Stars, I really messed this beauty up! but I’ll definitely try it again and I’m sure it will be a must have!
NEXT TIME I plan on doubling the beef stock and other liquid ingredients.
