I have been hitting the healthy meals a lot lately. Look at those beautiful, vibrant colors. I love it! Click on any of the categories on this post because they are all delicious.
I’d say go ahead and stuff them well over the tops. I stuffed them to the top and the ingredients settled while in the oven so they look sunken in. If you want more of a wow factor while serving go ahead and stuff those babies high above.
You can add almost anything to fill these peppers. Try tomatoes, black olives, chili peppers or even green chilies.
Quinoa Stuffed Peppers
Ingredients
- 3 cups cooked quinoa
- 1 cup corn kernels
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup shredded cheese
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp chili powder
- salt and black pepper, to taste
- 6 bell peppers, tops cut, stemmed and seeded
Instructions
- Preheat oven to 350 degrees
- In a large bowl, combine quinoa, corn, beans, cheese, cumin, garlic onion and chili powder, salt and pepper
- Spoon filling into each bell pepper cavity. Place on prepared baking dish, cavity side up, and bake until the peppers are tender and the filling is heated through, about 25-30 minutes
- Serve immediately
