Salmon with Brown Sugar and Mustard Glaze

Last week it was coconut…this week it’s brown sugar. This is my second recipe I’ve made with brown sugar in it, in as many days. Oh how I love to cook with brown sugar!


This recipe made it to the top of my list in just one taste! “Wow!” That what I when I tried the glaze while my salmon was cooking. I loved it! I have made a vinaigrette with red wine vinegar and Dijon mustard before, and I’m pretty sure I’m going to have to add sauteed onion and brown sugar to it every now and then because I really, really like this glaze! The mustard, sugar and vinegar went together very well. I’ll be honest, I was expecting to like this recipe, just not as much as I do!  It would be good on top of veggies too! Try it.

On to the recipe…I got the idea from Martha Stewart and modified it a little to my own taste, and to what we had!

  • 1 tablespoon extra-virgin olive oil
  • 1 small onion, minced (they called for a shallot, but I’m not into spending $3 on a small onion with a fancier name!)
  • 1/4 cup red-wine vinegar
  • 1/4 cup dijon mustard
  • 1/4 cup packed brown sugar
  • 2 salmon fillets  

 Directions

  1.  In a small saucepan, heat oil over medium-high. Add onions and cook, stirring often until softened, 3 minutes. Add vinegar and cook until slightly evaporated, 1 minute. Add mustard and brown sugar; stir until warm and combined, 1 minute. (To store, refrigerate cooled glaze in an airtight container, up to 1 day.)
  2. Place salmon fillets on a foil-lined rimmed baking sheet. Brush top of salmon with glaze. Bake at 350 for 10 minutes (time varies depending on size of fillet), salmon should be opaque throughout.

Note: It also called for salt and pepper, but I almost never add salt and pepper. I figure if I want a little after it’s cooked I can add it then.

I get my salmon from Walmart…have you ever checked out their seafood section? It’s amazing, and a really great price!

NEXT TIME: If you noticed from the picture I didn’t mince my onion. I just chopped it up. I think it would be better minced however, so next time I will do that. How do you mince your onion? I mince my garlic on a small grater, haven’t tried with onion but I can imagine it would work just fine.

I’m terrible at making sides…but tonight I did! Points for me 🙂

4 Stars: I can’t give this a 5 star because my husband didn’t want any on top of his! I know, right? I gave him a bite of mine and he liked it, he just didn’t want it all on his because he doesn’t like red wine vinegar. I need to stop telling him what is in his food 🙂
