Swedish Meatballs

These little guys are perfect over rice or egg noodles for dinner…or as a little appetizer for a dinner Super Bowl party.

I am so excited for Super Bowl…any reason to make good food is exciting for me!

Swedish Meatballs
Ingredients

  • 1-1/2T vegetable oil
  • 2T butter
  • 2T Milk
  • 1/2 onion, finely chopped
  • 1/2 cup Panko bread crumbs
  • 1/4 cup + 1 Tbsp Evaporated milk (separated)
  • 1 lb ground beef
  • 1 egg, beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp ground allspice
  • 1/8 tsp nutmeg
  • 1/4 cup all-purpose flour
  • 3 cups beef broth
Instructions
  1. Preheat oven to 200 degrees F
  2. Melt 1-1/2T oil in a large skillet over medium heat. Add the onion and sauté until tender (5-10 min)
  3. Combine the bread crumbs and 1T evaporated milk and store. Add ground beef, sautéed onion, egg, salt, black pepper, allspice and nutmeg. Mix well and form golf ball size meatballs. {I combined all these ingredients in my KitchenAid, that’s just the easies for me}
  4. Heat 2T of butter in your sauté pan over medium-low heat. Add the formed meatballs and saute until golden brown on all sides, about 7-10 minutes. Using a slotted spoon remove and place into an ovenproof dish and place in the warmed oven. {If you feel like your meatballs need to be cooked a little longer you can up the heat to 300 or 350 and finish cooking them…that’s what I did}
  5. Back to your sauté pan, decrease the heat to low and add your flour to the pan. If there’s not enough butter left over you can add more. Whisk until the flour is lightly browned, about 2 minutes. Gradually add the stock and whisk until it begins to thicken. {You don’t want it clumpy…that’s where the extra butter would come in when browning}
  6. Add 1/4 cup evaporated milk and continue heating.
  7. Once hot, remove the meatballs from the oven and cover with the gravy, and serve.
