A doctor my husband worked with during his rotation year suggested this Walnut Taco Meat recipe to us and I could no believe how good it was. We don’t follow a vegan diet or anything but I tell ya if every recipe tasted this good I wouldn’t have a problem trying it out.
Walnut Taco Meat
Ingredients
For the Filling:
- 2 cups walnuts
- 1-2 Tbsp olive oil
For the taco seasoning:
- 2 Tbsp chili powder
- 1 Tbsp ground cumin
- 1-1/2 tsp ground coriander
- 1-1/2 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne
- 1/2 tsp salt
*You will not need all the taco seasoning for one recipe. Reserve extra seasoning for future use.
Other {optional} Ingredients
- Hard or soft taco shells, or bibb lettuce
- 1 avocado, peeled, pitted (optional)
- Tomato diced
- Cheese
- Chopped lettuce
- Black beans
Instructions
- To make taco filling soak walnuts in water for about an hour. Drain thoroughly.
- To make taco seasoning stir all ingredients together well in a small bowl. Store in tightly sealed jar
- Process soaked walnuts to the texture of cooked ground beef/turkey
- I used my Vitamix
- Combine ground walnuts with 2 Tbsp taco seasoning and olive oil if necessary
To Serve:
- Spoon some of the walnut mix into a lettuce leaf/taco shell
- Top with toppings of your choice
