Cinnamon Apple Oatmeal Muffins

I love making and having muffins. There’s nothing better in the morning then having breakfast sitting there waiting for you…and all you have to do is eat it, no effort required! That’s why I like to have muffins on hand. The best part is…they FREEZE well too!

Apple Cinnamon Oatmeal Muffins
Recipe modified from Cathlin Cooks  



Ingredients
1½ cups flour
½ cup rolled oats
1/4 cup light-brown sugar, packed

2T sugar
1/4t cinnamon to taste
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup milk or water
1/2 cup oil
2 eggs, lightly beaten
1 teaspoon vanilla
2 apples chopped (I used Gala)
  1. Preheat oven to 400°F and grease a muffin pan
  2. In a large bowl, stir together flour, oats, sugars, cinnamon, baking powder, and salt
  3. In another bowl, stir together milk/water, eggs, oil, and vanilla until blended
  4. Combine wet and dry ingredients
  5. Stir in apple
  6. Spoon batter into prepared muffin cups with a 1/4 cup 
  7. Bake for 15-20 minutes. Check at 15 minutes, if they aren’t done put them in for another minute or so…up until 20 minutes.
  8. Allow muffins to cool on a wire rack for five minutes before removing from pan to continue cooling. 

I didn’t put as much sugar in this recipe as the original, I figured if I needed or wanted it sweeter I could add a little agave nectar to it.
These are thick and really filling!

  • The muffins look delicious & if you had a moment of weakness and wanted to add calories you could put a little caramel topping on it. :-)

    Also, good call on the plate - completely required for this post. Wouldn't have been the same without it!
