Cranberry Avocado Salad with Cinnamon Toasted Almonds and Poppyseed Dressing

Wow! That title was a mouthful!

I can’t even tell you how good this salad is.

My favorite salad (at the moment) is Zupas Nuts About Berries, and even though my salad doesn’t contain the same things, the almonds and dressing were inspired by Zupas salad…and they turned out quite well if I do say so myself.

Cranberry Avocado Salad

with

Cinnamon Toasted Almonds

and

Poppyseed Dressing

Ingredients

12 ounces baby spinach

2 medium avocados
¾ cup dried cranberries

Cinnamon Toasted Almonds
Sesame seeds

Poppyseed Dressing

Place your spinach in a large bowl
Add avocado and dried cranberries
Scatter your candied almonds and sesame seeds over salad

You can either add the dressing and mix it into the salad yourself, or you can let others decide how much they want, or don’t want.

One thing I love about salads is how versatile they are.

You can make this more of a Waldorf salad and add cheese, grapes and apple slices.

Or during the holidays you can add pomegranate to it.

Or make it just like Zupa’s Nuts About Berries and add raspberries, blueberries, strawberries, and blackberries.

And just in time for Christmas, I’ll post the Cinnamon Toasted Almonds recipe on Friday! Don’t worry, you wont have to rush out to the store, you already have all the ingredients you need…and if you don’t I’m sure your neighbor can lend you a little cinnamon!
