If you like your lemon cookies to be a little sweeter half the lemon juice and add more powdered sugar to your batter. You could also top these meltaways with a cream cheese frosting.

Lemon Meltaways

Ingredients
- 12 Tbsp (1-1/2 sticks) unsalted butter, room temperature
- 1/3 cup powdered sugar
- Zest of one lemon
- 2 Tbsp lemon juice
- 1 Tbsp vanilla extract
- 1-3/4 cups + 2 Tbsp flour
- 2 Tbsp corn starch
- 1/4 tsp salt
- 2/3 cup powdered sugar
Instructions
- Cream the butter and 1/3 cup powdered sugar together
- Beat in the lemon zest, lemon juice and vanille
- Mix the flour, cornstarch and salt in a large bowl
- Beat the dry ingredients into the wet until just combined
- Roll the dough into a 1-1/4 inch log
- Wrap in plastic and let chill in the fridge for at least an hour {or put it in the freezer for 1/2 hour}
- Preheat oven 350 degrees
- Slice the dough into 1/4″ thick slices and place them on a baking sheet, 1″ apart
- Bake 12-15 minutes, or until just lightly golden brown
- Dredge cookies in powdered sugar to coat
