Pink Lemonade Sheet Cake Recipe // Ready For Summer With Olay

It’s starting to warm up a little bit here in Chicago, and I’m so ready for it. The first few days of high humidity still get to me, but high heat and high humidity just means more days at the pool for us. Which we love! Today I thought it would be fun to talk a little bit about how we get ready for summer around here, including part of my summer beauty routine, and my Pink Lemonade Sheet Cake Recipe with y’all.

My everyday beauty routine includes sunblock. Even in the winter! I don’t miss it.

However, if I’m being honest, I’m not the best at wearing sunblock on my arms and legs. I’m pretty good at staying in the shade, but if I’m at a ball game for one of my boys I don’t put it on. I just don’t like the way it smells or feels.

How To Get Your Kids To Wear Sunscreen

I’m starting my kids young too. Infact my six and 4-year-old make sure I always put sunblock on them when they go outside. So how do I get my kids to wear sunscreen? It’s just like everything, I started them young. Whenever they go outside they ask me to put sunblock on.

Here’s a few other things I started young:

  • They won’t ride their bike without a helmet
  • They eat their vegetables at dinner
  • They know they shouldn’t eat sugar before lunchtime

And many other things. Are they perfect at all of them? Absolutely not, none of us are! Sometimes they sneak a treat, but I can let that slide. Ha!

Pink Lemonade Sheet Cake Recipe

For the cake:
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1/4 teaspoon salt
2 large eggs, lightly beaten
1/2 cup sour cream
1 teaspoon pure vanilla extract
1 cup (2 sticks) unsalted butter
1 cup  water

For the frosting:
1/2 cup (1 stick) unsalted butter
1 lb. (about 4 cups) confectioners sugar
1/4 cup frozen pink lemonade concentrate, thawed
Red food coloring (if needed for a darker pink color)
Pink pearl candy sprinkles

Instructions

  1. Heat your oven to 350 degrees. Spray an 18×13-inch sheet pan {or jelly roll pan} with non-stick cooking spray and set aside.
  2. In a large bowl, combine the flour, sugar, baking soda and salt. Stir to combine.
  3. In a small bowl add the eggs, sour cream and vanilla extract and beat with a whisk until combined.
  4. In a medium saucepan bring the water and butter to a boil. Slowly pour butter mixture into the flour mixture and stir until combined. Then add the egg mixture and stir until fully combined and smooth. Pour into the prepared pan and bake for 20-22 minutes, or until a toothpick comes out clean. Let cool for about 10 minutes on a wire rack.
  5. While the cake is cooling make the frosting. Add the butter to a medium saucepan and heat until melted. Remove from heat and whisk in the confectioners sugar and the thawed pink lemonade concentrate (a little at a time until you achieve the flavor you want. If too dry add a Tablespoon or two of milk/water).
    • Add a few drops of red food coloring if you’d like a darker pink color.
  6. Pour over cake and spread evenly with an offset knife or spatula. Cut into pieces and serve at room temperature.
