Raspberry Poke Cake

I love a good, easy, stunning dessert recipe, and this Raspberry Poke Cake is definitely one of them! I used fresh raspberries in my recipe, but you could always use frozen if they aren’t in season or if you’d like to save some money. Raspberries can be expensive!

Do we ever really need a reason to make a delicious cake? I don’t think so! But incase you do you can make this cake for a birthday, Valentine’s Day, 4th of July, Christmas. Anytime really. I love a good poke cake during the summer because the frosting is so light it doesn’t’ seem to weight you down like a thick buttercream.

Raspberry Poke Cake Dessert Recipe

Ingredients

  • 1 box white or vanilla cake mix, and ingredients it calls for
  • 1 can sweetened condensed milk
  • 3 cups raspberries
  • 3/4 cup cold water
  • 3/4 cup sugar
  • 3 Tbsp cornstarch
  • 1 tsp lemon juice
  • 1 large box INSTANT vanilla pudding
  • 2 cups milk
  • 8 ounces cool whip, thawed to room temperature

Instructions

  1. Prepare and bake your cake according to instructions on the box. While your cake is baking make the raspberry sauce
  2. In medium saucepan combine raspberries, water, sugar, cornstarch and lemon juice. Over medium heat, bring to a boil stirring constantly. Cook until your mixture has thickened {about 5-7 minutes}. Cool for 10 minutes
  3. When cake is done baking, remove it from the oven and take a wooden spoon and poke holes into the cake
  4. Pour sweetened condensed milk evenly over the cake making sure to get some into each hole
  5. Pour the raspberry sauce evenly over cake and sweetened condensed milk
  6. Let the cake cool completely
  7. Combine pudding and milk and beat for 3 minutes. Set in the fridge for 5 minutes
  8. Stir in cool whip and spread evenly over cooled cake
