Almond Creme Crepe Filling

Yay for crepes!
I have it in my mind that we will have a tradition of making crepes every Saturday morning…it has yet to happen, but I think there is a good chance when the babe is a little older. And when we’re in CT, away from family, with nothing else to do on a Saturday morning, because heaven knows we wont be going to visit my family!
 Moving is starting to terrify me!!!

Oh ya, got a little sidetracked…
Almond Cream Filling
Ingredients
1 can sweetened condensed milk
1/3 C lemon juice
2 tsp. vanilla
1 tsp. almond extract
1 pint whipping cream-whipped
Directions
Mix first 4 ingredients, then fold in whipping cream
Do NOT stir after folding
Cover and refrigerate
So easy right? And oh so good.

It was a crepe bar so everyone made their own. I mixed mine with a little brown sugar and added slices of banana. Loved it. I should have added sliced almonds on top. Next time.

*When I was making the filling all I could taste was the lemon when I tested it so I actually added 2 more tsp of almond extract. I think it just needed a little time to rest, time to let all the flavors combine, because the finished product was a little
too almond-y.
