I have really been trying to incorporate veggies into our meals lately, and it’s actually been a lot of fun! The variety of dishes you can make from one vegetable is amazing! I really loved these green beans, with the hint of lemon, the added ginger and crunch of walnuts. It was an awesome recipe to start off with! I’m really excited to share all my other great recipes with you.

Green Beans with Walnuts and Lemon
Recipe adapted from The Daily Meal
INGREDIENTS
- 12 oz fresh or frozen green beans, trimmed
- 1/2 Tbsp butter
- 1/4 cup chopped walnuts
- 1 tsp grated fresh ginger
- 1/4 tsp finely shredded lemon peel
- 1 tsp lemon juice
DIRECTIONS
- Cook beans in a medium saucepan, covered, in a small amount of boiling water until crisp and tender; drain
- In a separate saucepan melt butter over medium heat
- Add walnuts and ginger; cook until nuts are roasted, about 2-3 minutes
- Remove from heat; stir in lemon peel and lemon juice
- Stir nut mixture into cooked green beans
